Abstract: Health and physical education is a combined and integrated curriculum area in Australia and New Zealand. While this approach is not always the case in all learning contexts (e.g., the UK), for the purpose of this chapter, we have positioned health education as the main focus for education for sustainability (EfS). Health is a fundamentally important concept for the sustainability of society. For a healthy society, we need healthy individuals who are living, learning and functioning within a healthy environment. What we choose to put into our bodies and our outlook and lifestyle choices have a direct impact on our health status, as well as having social and environmental implications.
