Abstract: We report the synthesis and photocontrollable ice recrystallization inhibition (IRI) activity of a panel of carbohydrate-based surfactants. Such materials should attract broad interest as on-demand, photocontrollable cryoprotectants and responsive tools for investigating the dynamic mechanisms of ice recrystallization.
