Abstract: Introduction: Coeliac Disease (CD) is a chronic autoimmune disorder targeted against the harmless grain protein gliadin which affects around 1 in 300 people worldwide. CD is currently diagnosed using both serological and histological metrics although there is debate as to the accuracy of these measures.
